Crafted by Place

Freshwater Baking Co. is inspired by the winding coast of Brunswick and surfside towns of Australia, the places we call home. We carry a connection to Freshwater, a sun-drenched beach in Sydney. The rhythms of that golden coast and the sway of ocean winds echo here in Maine, shaping the laid-back essence of our bakehouse.

Intentional, simple ingredients lead the way, always. Our sourdough is crafted with organic, regional grains and infused with the spirit of the coast, from Australia’s surf to Maine’s tides.

Your Baker, Nick Green

Nick began baking sourdough in his hometown of Sydney, Australia, over a decade ago. He came to the United States to deepen his baking craft at the Culinary Institute of America. After graduating, Nick headed west to Big Sky, Montana, where he explored the heritage of rustic Rocky Mountain fare and found seasonal inspiration rooted in the dramatic landscapes.

Nick and his wife, Jessica, eventually landed in Vermont and opened a home bakery, Fig & Fennel Bread Co., baking artisan sourdough for Montpelier and Stowe. In the Green Mountains, Nick cultivated a strong appreciation for place, prioritizing partnerships with local producers and regionally-sourced, thoughtfully milled flour.

The ocean eventually called this Aussie to coastal Maine, where he and Jessica found home. Here, they reimagined their bakery as Freshwater Baking Co.—an expression of place, shaped by the timeless ingredients of sourdough: flour, water, salt.

Freshwater Baking Co. operates out of the Booker Creek Bakehouse, located in Brunswick. The Bakehouse is not open to visitors, but we’d love to see you at the Freeport Farmer’s Market and Moderation Brewing’s Night Market this summer.
